Ingredients

  • Berrie Layer
    • 1 cup Sugar
    • 1 cup Water
    • 1 tablespoon White Karo
    • 2 tablespoons Lemon Juice
    • pinch salt
    • 3 tablespoons Cornstarch
    • 1 small package Jello Mix
    • 1 quart berries
  • Cream Cheese Layer
    • 8 oz. cream cheese
    • 8 oz. cool whip
    • 1 cup powdered sugar
  • 2 pie crust

Directions

1. Mix together the sugar, karo, water, lemon juice, cornstarch, and salt
2. Bring to a boil until it forms a gel-like consistency
3. Remove from heat, add the red jello, stirring until dissolved
4. Stir in berries
5. Let it cool.
6. Mix together the cream cheese, powdered sugar, and cool whip. Spread it between two pie crusts.
7. After the berries have cooled, spoon them on top of the cream cheese layer and chill.
8. Cover pie with cool whip, if desired.
9. Store in fridge.

Notes

Works extremely well with blackberries or any other soft berry.
